Chef Shaymus Alwin
Shaymus Alwin extends his extraordinary culinary talents to The Royal Hawaiian, a Luxury Collection Resort, as the Chef de Cuisine for its fine dining venue, Azure Restaurant.
Born and raised in Kennebunkport, Maine, Alwin is responsible for leading the award-winning restaurant's team in continuing to create sophisticated culinary dishes highlighting Hawaii's seafood and produce for a fine dining experience at the historic 528-room luxury resort on Waikiki Beach.
Alwin has over 15 years of extensive knowledge and experience in the restaurant and culinary industry, and was even invited to cook at the coveted James Beard House in New York in 2016.
Alwin studied under world renowned chef Thomas Keller at The French Laundry in Yountville, California.
General Manager - Micah Suderman
Micah Suderman serves as the General Manager and Certified Sommelier of Azure Restaurant.
As a local boy from Hawaii, Suderman takes pride in pairing the perfect wines with delectable dishes at Azure. He was recently named "Top 40 Under 40 Tastemakers" by Wine Enthusiasts in 2017.
