Shaymus Alwin extends his extraordinary culinary talents to The Royal Hawaiian, a Luxury Collection Resort, as the Chef de Cuisine for its fine dining venue, Azure Restaurant.
Born and raised in Kennebunkport, Maine, Alwin is responsible for leading the award-winning restaurant's team in continuing to create sophisticated culinary dishes highlighting Hawaii's seafood and produce for a fine dining experience at the historic 528-room luxury resort on Waikiki Beach.
Alwin has over 15 years of extensive knowledge and experience in the restaurant and culinary industry including his most recent role as executive sous chef at Azure Restaurant. In that position, he gained valuable experience in pursuit of his culinary dreams and visions while training and managing the restaurant's staff, daily operations, and inventory continuing to ensure the continuation of providing highest level of food quality for the award-winning restaurant. His previous culinary experiences include serving as executive chef for Bistro Catering, sous chef for The Bistro at Century Center, and sous chef for Chai's Island Bistro.
Under his support as executive sous chef, Azure received Honolulu Magazine's 2010 Hale Aina Award for Hawaii's Best New Restaurant and the 2010 Ilima Award for Hawaii's Best Restaurants Critics Choice. In 2011, Azure was recognized as Oahu's Best Restaurant Bronze by Honolulu Magazine.
Alwin studied under world renowned chef Thomas Keller at The French Laundry in Yountville, California.
